Pho-bulous...

Robbie loves Pho (Vietnamese beef noodle soup) and our weekly visit to the City Market also included buying a Pho soup base at the Huong Vuong market. Unfortunately, Robbie suffers from Lack of Attention syndrome (unless, of course it pertains to kerning, downloading, or any Adobe program) and he bought a kit that makes soup for 20 people. Did I mention I don't like the Pho?

He was so excited to make the soup until we were home and he was reading the label on the soup kit box. So, I found a recipe online and whipped up a knock-off version. I thought it was okay and cooked the meat much longer than they suggested. When you order this soup at a Vietnamese restaurant the meat cooks in the soup as they bring it out to you. The beef is sliced super thin and logically I know it's cooked, but it still grosses me out. It's just a little too close to the cow, if you know what I mean....and maybe you don't...

Anyway, Robbie seemed to enjoy the soup and it made for a pretty picture. Of course, I had to take a picture of my bowl because Robbie naturally omits the fresh basil, cilantro and scallions...or nearly anything that might actually make this soup (a) healthy and (b) taste good.

Mmmmmmmmmm that looks great! When you guys get your keisters (sp?) out here, we take you to Pho at Joe's Shanghai. :)
